Endive papillotes with 2 fish
Prepare your "Selection" endives by removing the central part with the tip of a knife.
Braise them for 30 minutes with a knob of butter, a tablespoon of olive oil and a teaspoon of sugar.
Cut your monkfish and fresh salmon into chunks and slice your 2 lemons.
Preheat your oven to 200°.
For each of the 4 papillotes: place a few slices of lemon, a endive and a few pieces of monkfish and salmon on a sheet of parchment paper. Add red berries, salt and pepper.
Close the papillote. Bake your 4 papillotes and cook for 15 minutes.
Just before serving, lightly open the papillotes to garnish with strips of smoked salmon and some dill.
