Julia’s stew of endives and salmon steaks with dill
Steam the salmon steaks for 8 to 10 minutes.
Meanwhile, put your Vith'Cuites endives in the microwave for 7 minutes.
Take advantage of the two simultaneous cooks to prepare your sauce: Pour the juice of the second lemon, the vinegar and 2 tablespoons of water in a small saucepan. Simmer. Add the egg yolks and gradually 150 g of butter (over very low heat) without stopping to whisk. Off the heat, stir in the sour cream and half the chopped dill.
Sprinkle the juice of a lemon over your Vith'Cuites endives, salt, pepper and sprinkle with sugar. Brown them in 50 g of butter. Serve the endives cut in half with the salmon steaks and sauce. Sprinkle with dill and pink berries.
