PREPARATION
Fry your smoked breast slices. Reserve them.
Cut your «Classics» endives in julienne. Braise them in a mixture of butter and olive oil. Season.
Toast your country bread slices.
Arrange braised endives and breast. Add a generous portion of maroilles.
Go under the hot grill.
Serve with a salad of endives and walnut nuts seasoned with a walnut oil dressing.
